First off there is no reason you should have the Email Server Edition, unless your computer is an email server (doubtful). If you bought the wrong version, contact Grisoft and I'm sure they'll work something out. You probably only need avgcc to run at startup. I don't know what the other ones are. First you say you have the free version. Next you say you have the paid Pro version. Then you give me 2 totally different lists of startup items. What's going on?

He said he only wants the Macromedia ActiveX controls, so the best way to stop them from being shown is either to disable them completely or install SP2 RC1 which blocks suspicious ActiveX controls.

Tools -> Internet Options -> SecurityTab -> Custom Level button. Then disable downloads of all ActiveX controls. If you already have the Flash one, you shouldn't need to worry about it.

It's when you start an installer with a special switch (i.e. /q) which supresses any visual output and usually allows you to specify default options you want installed. It's extremely handy for unattended cd's.
