It does not appear that there is a way to select anything but the default IPX/SPX protocol with Netbios enabled in the unattend file. Out of curiousity, what version of Novell are you still using?
Like Soulin said, GDI is distributed through Windows Update so if you have it slipstreamed or included with your build process, simply remove it. The video settings you'll just have to adjust until you find the right resolution for your video card and monitor. 800x600 @60HZ tends to work most of the time.
Create a DNS A record with your ISP or if you have your DNS parked at your home server, create the A record there that associates the IP address your using with www.name.org.uk. That should be all you need.
Check the boot settings in the VM and see if it is set to boot from CD. When you first start the VM and press either F2 or F12 (can't remember exactly which one) and verify the boot order. Or you could scrap the VM shell you built and try creating a new one.
You could use secedit.exe of gpupdate /force to apply a basic security template found in %SYSTEMROOT%\Security\Templates to your system. That should reset the permissions to what they were out-of-the-box.
I would look into the Altiris Client Management Suite. It has tools for imaging PC's, unattended installs of PC's, Software Deployment, and PC 'personality' migration among other things. Definitely the best option for your scenario in my opinion.

Your administrator's have taken away the option to run LiveUpdate for a reason as you stated so they can test compatibility with the software in use on the PC's. Why would you want to try and circumvent their efforts?
Have you tried publishing the pages to your web server? What kind of problems are you having? Usually you just publish by choosing File --> Publish Site Then you can either publish using HTTP or FTP etc. by simpling selecting the method and providing the ip address or DNS name of the web server.
You could use the SendKeys command in vbScript to send an ALT+F4 command to close the window. See the MS Technet Script Center for example of how to use SendKeys. Then just call the .vbs file from your RunOnceEx.cmd.
You might need to find the TCPIP parameter settings in the registry for your network adapter and delete the information in those keys. I had to do that once to get my IP to renew.
You want to use VMware Workstation version 5. The GSX and ESX versions are for servers. While GSX will run on WIN XP it would be kinda costly for what your wanting to do.
The old MS utility cusrmgr.exe will rename the administrator account and allow you to change the password. You can also use security templates to rename to administrator account using secedit.exe or gpupdate.
Sometimes one spyware program won't catch what others will. Same for anti-virus software, that's why I suggested running it. Might want to also check memory DIMMS as well.
