I just wanted to get your guys opinion on getting a really good MOD Power Supply for Intel's New Board 975XBX. I was read and it says I need a revision of 2.0 or greater Power Supply. So if you guys have good PS, I am listening!

I've heard the ModStreams are known to have several issues that the PowerStreams do not.

Next I need a psu I will get the Hiper Type-R 580w Modular PSU

I remember something that I terribly disliked about the Hiper Type-R series, just can't remember though. I recommend Seasonic power supplies, the very best in my opinion. Also you might want to get a PSU with Active PFC and modular cabling.

Best PSU on the market today: SeaSonic. Nothing but quality. I like Thermaltake when I build systems for OTHER people, but mine are pure SeaSonic.
