Nope.  We are allowed to use only MOST-RECENT versions of Edge and Chrome.

I use a commandline startup to PREVENT the auto-update and I can sneak under the IT Radar with OLDER versions of Chrome by doing so.

I can hide Official Chrome behind "portableapps" loader and can use commandline startup switches.

Otherwise, the computer at work would use the SAME PROFILE for both Edge and an "installed" version of Chrome.

But they have it set up so that every forced auto-update DELETES ANY AND ALL EXTENSIONS (which is way way way WAY too often!, feel like every two weeks but probably only three to four weeks, WAY TOO D#MN OFTEN!).

You could choose to keep it and re-enable the extension anyways. The Chrome web store does not have any sort of alternative. Also you could say their messaging is slightly deceptive. On both the toast when opening the browser, and on the web store it says it "doesn't follow best practices" which is gives a negative connotation. I'm sure they flag all extension with v2 this way but they could say something like how they are migrating to a new method and these extensions haven't updated to it yet.

Yes you can activate the MV2 extension again,but after June it will be advisable to consider an MV3 extension and then do some testing to see which one is best suited to everyone's personal characteristics.

P.S.

Considering that this forum is more oriented to fingerprinting remedies I will show you a recent test (Cover Your Tracks) I did with Edge + ublock Origin Lite and Chrome + Adguard Adblocker v.5.0.202
You will notice that both browsers get the exact same score of 15.42 Bits of Identifying Information.
A very good score considering that probably the average user of Chromium-based browsers settles on values of 17-18 Bits.
