I'd like to rip some of my CDs and convert the tracks to mp3s, but I'm new to this software. What recommendations do you all have for a good program? My conditions are: small, no flashy GUI, ability to set the bitrate (e.g., from 76kbs to 256 or more).

My recommendation - CDex. It's got everything that you want. You can replace the LAME encoder that comes with it (I think it's v3.92) with the latest release for better sound quality.

You should REALLY check out Exact Audio Copy - AKA EAC - it's just sooo cool - You'll love it :D
