try and error is the best way to learn. It all depends on WHAT you want to encode.

I prefer Nero Digital Mpeg4 it is great for encoding DVD movies and for TV capture. And it is easy to use as well.

I don't like Divx and Xvid, they are to complicated.

Afterdawn and Doom9 got some great guides.

DivX sucks IMHO. XviD is a lot better. When I used to do AVI encodes of my DV footage, XviD gave me sharper image at lower bitrates than DivX. Anyway, www.videohelp.com has all the info you'd ever need.
