I read on the ATI spec page for the Xpress 1250 graphics card that it has "Unified Memory Architecture, with 16 to 512 MB of the main memory configurable as display memory."

Does anyone know where I can change these configuration settings?

To add, some BIOS don't give an option and in that case it depends on the memory Installed, with 512MB RAM it will be set to 64MB, with 2GB RAM it will be set to 512MB for example.
