The %ProgramFiles% variable isn't critical, it just adds support for people whom chose to install to a different partition, you can hard code the paths, I think paths with spaces in would need to be quoted.

As far as I know you can only extract to the one path. you could extract the to the temp folder and make a cmd file to copy them to the desired location using the "Run After Extraction" option.
