is it worth using the administraion kit to customise my Internet Explorer settings, etc. and then adding them to an unattended cd?

yep:

From there you can specify your own ins file. I didn't use the IEAK, but I installed it and looked at the Reference section in ieakhelp.chm to make my own INS file.
