Modifying Windows after Install

Hi,

I am looking for a way to modify Windows after the install. We have machines which are non-domain machines. We need to somehow make an MSI or installer to remove items. I've tried using Wininstall with no luck, it only looks for additions. I want

to be able to easily remove the following by running a script or MSI. For example

Remove all games

modifying start menu

lock down certain items

etc etc
