You can use RT Seven Lite - it will automate the process. Just run it, select the install.wim to configure.

When it loads the install.wim Ultimate image, select Components from the tasks pane.

Click the Features removal button.

From the list on the left side, check the components you want to PERMANENTLY remove,

Click Apply button when done.

After that click the commit button.
