is it possible to revert to the old look of the "Open..." windows i.e., remove the left sidebar (my recent documents, desktop, my documents...) ?

you can remove the bar with the following registry settings

Windows Registry Editor Version 5.00

[HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Policies\Comdlg32]
"NoPlacesBar"=dword:00000001

BTW, you can also add/remove items on that bar just search Google for "Customize Places Bar"

I also would like to take out the left Placebar in for instance:My Documents,My Pictures,My Music etc...

as I always use Views as Details.My question is this:If I use your suggested Coding,will this affect all such Folders? If so, can I easily revert back to what it was before?Thanks,
