Why cant I change the font size, color or case or underline text when replying to emails in Outlook 2003? All these options are greyed out.

When I open a dialog box in outlook, this alwauys opens up maximised. How can I prevent this? eg: when I right click to reply to an email, the box that opens up is always maximised. Did repair outlook but still the same.

Is it possible to view Inbox, Sent items and Contacts simultaneously in a single window(ie multiple panes) ? Or is there a plugin to do this?
