Adobe themselves http://www.adobe.com provide a tool to generate unattended installs for their Acrobat product line.

The tool is called Installshield Tuner 7.0 for Acrobat and can be downloaded here.

Still, I don't know whether the Product Activation can be bypassed or not.

Yes it can. And you can also kill the periodic update function.
