Upgrading hard drive

I've run out of space on my C: drive of a 2003 server, so it's time to upgrade. I plan to buy a 500GB primary drive, put it in RAID1 and then buy a 1TB to put elsewhere to back up to. I'm thinking I should be able to use WinPE/ImageX to copy the old drive to the new. There are two partitions on the old, and I'll need it to stay like this, just with different sizes. What's the best way of doing this?
