Need ideas

I have a project. I will be setting up some teaching computers. These computers will be used to teach users everything from how to use a mouse to how to use Quickbooks Pro to using SQL Server. So there will be a wide range of what the computer needs for each class. My first thought was to set up an image and use SMS to push the software needed for that class. But I was told that the licenses for these computers are OEM and not volume. This being the case re-imaging the computers after the class will cause issues with wanting to be registered. Any ideas on how to avoid this issue? Thanks for all suggestions.
