Actually, Office 2019 works just fine on both 7 and 8.1... Since Office 2019 shares the same version files as Office 2016 and 365 (which both work on 7 and 8.1), you need to circumvent the artificial block. It just requires a bit of work with some hidden executable. I would direct everyone to this thread on MyDigitalLife, where user ratzlefatz made a tool to install Office 2019 on 7 and 8.1. Since Chromium is being further developed and also JavaScript, it remains clear that various plugins are no longer compatible with Chromium 49. In Advanced Chrome, the JavaScript is older than by Chromium 49. On Google Chrome 49, I could to persuade μBlock 1.17.0 still working , for this which I have adapted the file manifest.json ("minimum_chrome_version": "49.0") and have taken over the file "asset-viewer.js" from the μBlock version 1.16.20.

Ideally yes, but in practice I've found a few sites still using TLS 1.0 (!) and at least one (www.fedex.com) which only supports weaker cipher suites. So you may find you need to keep a few that SSLLabs marks with orange. Try to keep them to a minimum, though.

It was only a matter of time before older Chromium versions are no longer supported by μBlock (last version which supports Chromium 49 is version 1.16.20). For this reason, you can download an older version from Github in the following link and run it in developer mode under Extensions. https://github.com/gorhill/uBlock/releases
